This guy’s definitely too cool for school. But he loves his mama’s muffins.
2.5 cups of GF baking mix (Pamela’s is always my fave)
2 tsp. vanilla
.5 cup of water
2 cups of berrries (I used frozen strawberries, blueberries and blackberries)
1 tsp. coconut sugar (more if you like things sweet)
Optional: I added .75 cup of teeny tiny chopped kale for my little man. The berries mask the flavor.
Bake in greased muffin tins at 350 for 14-18 min., depending on whether they are mini or regular.
