Mama Hannah’s sneaky healthy banana bread

Good morning! So I made this banana bread yesterday for my son who is on a typical 7 year old carb binge. I wanted to get some good nutrition in him and avoid fighting about the snacks he can have. So here it is- modify to your taste- leave the greens out if you are old enough to eat your veggies w/o compaint!

4 Tbsp. melted coconut oil
4 eggs beaten
1 3/4 cups of Pamela’s GF baking mix or mix of your choice
1/2 tsp of salt
4 bananas mushed
1 tsp of vanilla
1/3 cup of super dark chocolate cut up into small pieces (i use 85%)
1 cup of kale chopped into tiny pieces- think food processor or the like

Mix all the ingredients together and put in a bread pan or square cake pan and bake in a pre-heated oven at 350 for 1 hour. The result is a not too sweet but still tasty, buttery bread with the anti-oxidants and magic of dark chocolate, sugar only from the bananas, and the miracle of kale! Enjoy!
