Apple spice muffins

The secret to my muffins is using a gluten-free mix- which does half the work for you!

The Recipe:

  • 1-1/4 cups Pamela’s Baking and Pancake mix (or mix of your choice)
  • 1/4ups of milk or dairy alternative
  • 1 egg
  • 1 tsp. vanilla
  • 2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/2 tsp. allspice
  • 1/4 tsp. cardamom
  • 2 med. size apples chopped finely, skins on
  • 1/4 cups of coconut sugar

Mix all ingredients thoroughly, cook in preheated oven at 350 for 12-18 minutes
Hide from your family because they smell so good, they will probably want to eat them all.
